I imagine driving home after a shift downtown and KUTX is really killing it. A lot of indie rock and hip hop, with some country and Latin influence. This playlist includes the new generation of Austin's music scene, a few of my favorite recent indie hits, and a couple of bangers from our hometown heroes.

Dirty 6th Horchata

Dirty 6th Horchata Jagermeister cocktail by Caer Ferguson

Recipe:

  • 1 ½ parts Jägermeister Cold Brew Coffee
  • ½ part Teremana Reposado Tequila
  • 2 parts Horchata Cream

Glass: Collins

Garnish: Grated Cinnamon

Method: Swizzle until cold. Top with 2 parts Horchata Cream. Garnish

Inspiration: Horchata is creamy yet refreshing and full of baking spice. Make it dirty with some coffee or espresso for a bitter note, and you have the perfect breakfast beverage. This is a boozy version of a Dirty Horchata while paying homage to Austin's most debaucherously famous street. The spice notes of Jägermeister Cold Brew Coffee blend beautifully with cinnamon notes, so this seemed like a perfect combination. A splash of aged tequila adds an earthy vanilla note. My horchata cream makes this almost like a very Austin White Russian.

Caer Maiko, originally from Santa Monica, CA, started bartending in Boston 9 years ago during college and now works and lives in Austin, TX. Since moving to Austin, she has been a bartender and manager at some of the best most highly regarded establishments and now resides as a General Manager and Bar Director. Her bartending accolades include being named one of Beverage Media's Bartenders to Watch 2019 and Austin's 2019 Bartender of The Year at Culture Map's Tastemaker Awards. After winning Espolon Cocktail Fights National Championship in 2016 (solo) and again in 2018 (tag team) with Sharon Yeung, they founded Daijoubu Pop Up. Their goal is to create "Super Asian Cocktails" and make more space for Asian American people, flavors, and culture both in front of and behind the bar. Over the last two years, they have hosted dozens of events, traveled across Texas in their renovated bus, been honored by Tales of the Cocktail for our "Innovative Pivots," and raised over $15K for charity. When not bartending, she is often gardening, playing with her cats (Mango and Yojimbo), making art with her husband (Sam), or snuggling with her daughter (Kimiko). 

Caer's Tips & Tricks

Horchata Cream:

Soak ½ cup of white rice and 2 cinnamon sticks with 1 cup of water overnight (at least 6 hours).

Blend with 1 cup cream, ½ cup powdered sugar, and 1 teaspoon vanilla extract.

Strain to remove solids.

Lasts 1 week when refrigerated.

If you don't have crushed ice or a swizzle stick, shaking for twice as long as you would normally shake a drink will create a similar effect. 


What Do You Love About Austin?

The food and beverage community here is so excellent. Yes, the food is delicious, but more than that, the people that make up the community are incredible. Last year, during the Texas freeze that absolutely devastated our state, restaurants, bars, breweries, and distilleries did so much to make sure people had hot food, clean water, and somewhere warm to stay. The amount of different food from around the world represented here is wild. And while there should always be more, the number of food and beverage establishments owned or run by women and or POC are some of the strongest voices in our city. The warmth of southern hospitality with a newfound diversity is a fabulous combination.
