With this playlist, I wanted to show Charlotte's eclectic range of music with an ode to every bar or restaurant I've ever worked in this city. It houses a selection of various artists local to Charlotte and the state of North Carolina, as well as many others that I've found my constant companions throughout my time and travels in the industry. This is an all-encompassing list of artists, so be prepared to go all over the place! I enjoy almost every type of music, which is readily apparent in this playlist. I hope you enjoy it!

What do you love about your city?

It's a constantly growing metropolis with endless possibilities, and even though there are some growing pains and old haunts lost along the way, there is always the promise that tomorrow will bring new opportunities that embolden the city and its inhabitants to new heights. I've spent most of my life here, and although I love to travel and have moved away a few times, I always end up coming back.

Cocktail Inspiration:

My inspiration for this cocktail comes from my love of all things fall in Charlotte. We get to experience all the seasons here in North Carolina, but fall is by far my favorite, and it's not something I take for granted. Charlotte is known as "The City of Trees," and this time of year, it's easy to see why. An array of colors floods the city almost overnight, from vibrant yellows to varied amber hues; it's a spectacle to behold every year. Being the second largest banking center in the country, we have a myriad of people from all over the world coming to our city daily. For years this diversity has had a direct correlation with the thriving F&B community here in Charlotte and the rest of the Piedmont region. I wanted to accent some of that complexity while still providing a cocktail that is something palatable to all. A shockingly refreshing combination of fall flavors and Jägermeister blend to create this crushable November bevy. Cheers! 

Cocktail Name: Tycoon's Harvest

Name: Henry Schmulling

Recipe:

  • 2 parts Jägermeister
  • 1/2 part Spiced ginger syrup (see below)
  • 1/2 part Cinnamon demerara syrup (see below)
  • 1 part Fresh lime juice
  • 2 drops Pourly Made Allspice Saline

Glass: Rocks

Garnish: Trimmed orange peel

Method: Shake and strain over ice into rocks glass, garnish and serve.

Henry Schmulling was born and raised here in Charlotte, North Carolina, a trait not common to many that call themselves Charlotteans. Having ultimately received multiple nominations and awards throughout his career, his journey into food and beverage began with a passion for craft beer & brewing in the early days of the Charlotte scene. This eventually led to an infatuation with spirits & cocktails and has been taken to new heights over the past decade. He has made waves in the city by working his way through the service industry in Charlotte at numerous outlets, always observing and learning while executing his extensive reach of knowledge into what Charlotte can now call a competing region. While most of his 19yrs in the service industry have been spent in Charlotte, Henry has ditched "The Queen City" a few times for stays in other cities such as Cincinnati and Phoenix. These periods away from home have taught him how much he appreciated the beverage scene in Charlotte and how much potential it still had to offer. Running bars and consulting with others, he took his love for the craft and began to create an atmosphere that spoke to restaurant entrepreneurs and patrons alike. Making his mark as one of the city's best, Henry's focus is to not only create more than just an average beverage program but more diverse and varied concepts all over the city. He strives to take it one step further with education and fellowship to help the community here in Charlotte blossom. Henry is also an active entrepreneur with multiple side businesses. His most prominent is Flying Toaster Design & Manufacturing, which specializes in high-end, handmade, custom goods for the service industry. As well as a burgeoning bar supply business, Pourly Made Beverage Company.

Tips & Tricks

Cinnamon Demerara Syrup

  • 6 cinnamon sticks, roughly crumbled
  • 2 liters Demerara sugar
  • 1 liter water
  • Toast crumbled cinnamon sticks in a dry saucepan
  • Add sugar and water, then bring to a simmer for 15 mins
  • Pull off the heat and let rest for 1 hour
  • Strain, chill, and bottle

This is an easy recipe and produces an amazing, toasted cinnamon flavor without being too overpowering. It's complementary instead of dominating.

Spiced Ginger Syrup

  • 900ml PacRim Cold Pressed/Unfiltered Japanese ginger juice
  • 900ml granulated cane sugar
  • Mix together in a cambro
  • Blend ingredients with a stick blender until as much cane sugar as possible has been dissolved
  • Put in a saucepan on low heat and stir until all sugar has dissolved
  • Pull off heat
  • Strain, chill, and bottle

Ginger can be a finicky syrup to make just based on the inconsistency of most fresh ginger. The PacRim Juice is a little pricey, but the overall flavor is consistent and delicious, not to mention it's got a hefty level of spiciness that can be hard to find.
