Lexxie's Spotify Playlist & Inspiration
This playlist is inspired by chill beach vibes, tattoo culture, & pop-punk rock. I also threw in some local bands and DJs. I was a beach kid, growing up in a beach town. Cruising down the coast with my friends, hitting a bonfire, a house party, or a concert (And I still am that kid…just with more tattoos and more bills to pay).

The Stingray
Created by Lexie Georggin
Cocktail Name: The Sting Ray
Recipe:
- 1 part Jägermeister Cold Brew Coffee
- 1 part Bourbon
- 1 part Cream*
- ¾ part Biscotti Liqueur
- ¾ part Coconut syrup*
Glass: Dbl. Old Fashioned
Garnish: Mint Sprig
Method: Add all ingredients to the shaker. Dry shake and pour into mug/glass two-thirds full of crushed ice. Add straw and top with more crushed ice. Garnish with Mint and grated cinnamon.
Inspiration: A riff off the classic Midnight Stinger but with a San Diego beach vibe twist. Iced coffees are a staple here in SD. It doesn’t get much better than sitting on the beach with some cold brew and booze on a hot and sunny day (Just remember to shuffle your feet if you venture out into the ocean to avoid getting stung by an actual stingray).
Born and raised in San Diego, I’ve been rockin’ the nightlife and bar industry for 10+ years. I was predominately a high-volume bartender up until the past couple of years when I ventured into the world of craft cocktails. Expanding my cocktail knowledge has been an exciting and challenging journey for me. Transferring that fast-paced, wild energy to a more detailed and mature bar program has provided me with a unique outlook on this industry as a whole. I am so thankful for all the people who have supported and encouraged me along the way. I’m extremely fortunate to call this city and this industry my home.
Lexie's Tips & Tricks
*You can substitute the cream for dairy substitutes like oat or almond milk. The cream adds texture to the cocktail. But oat milk would be a bomb substitution paired with the coconut syrup.
Coconut Syrup:
You’ll need
- 1 can coconut milk
- 7 tablespoons coconut butter “manna”
- 1-pint rich simple syrup (sugar to water ratio 2:1)
Method: Heat Manna until liquid. Combine coconut milk and Rich Simple in a pot and begin to heat up. Add coconut butter and combine thoroughly.
It should keep for about a week!
What Do You Love About San Diego?
What I love most about San Diego, other than the perfect weather, is the people. We’re laid back, friendly, and we’re here to have a really good time. The San Diego bar industry is a tight-knit group. These people become an extension of your family. I wouldn’t trade this group of misfits for anything else in the world.
