Kitchen 56 is about creating the heart of the house and bringing a chef’s cuisine and a mixologist’s cocktails together, creating masterful pairings. This month, we visit Detroit, a city exploding in culture, food & beverage, hospitality, and fantastic industry talent. Lester Gouvia is an Executive Chef in Detroit, MI and Matthew Prezzato is a highly talented Bartender. They are Detroit natives that have experience working their way up through restaurant kitchens throughout the city.

Tell us the inspiration behind the recipe.

This was our comfort food. My mom cooked this at many times as a Sunday dinner. This is what home feels like to me.

Jägermeister adds a "caramel" flavor and body to this recipe. It enhances the gravy & chicken to create a flavor that enriches both.

Tell us why you love your city.

My goal in opening my restaurant was to bring the flavors of my Caribbean heritage to the people. To allow them to experience food that is not found at a resort, but what we shared at home.

Tell us the inspiration behind the recipe.

I drew my inspiration from the idea of creating a cocktail that pairs the flavors and aromas of Jägermeister to Trinidadian cuisine, specifically that of Chef Lester who created the Trini Stew Chicken using Jägermeister. My goal was to utilize multiple influences from different parts of the Caribbean in my cocktail while using as much influence from Trinidad as possible. From Cuba, the Daiquiri: An iconic classic cocktail that makes use of lime juice which is essential in most cuisine and cocktails in the Caribbean. The rum and bitters are both from Trinidad while Falernum is originally from Barbados. The acid in citrus pairs well with spice while the rum pairs nicely with richer sauces and proteins. Jägermeister, Jägermeister Cold Brew and the Falernum all add sweetness for balance and complexity from their herbs and spices that should make anyone enjoying a Caribbean meal next to this cocktail pivot between the two the whole way through the meal.

Cocktail Name: Deerborn Daiquiri

Recipe:

  • .75 part Jägermeister
  • .5 Jägermeister Cold Brew
  • .75 Trinadad Rum
  • .75 Lime juice
  • .75 House made Falernum
  • 2 dashes angostura bitters

Tell us why Jägermeister Cold Brew or Jägermeister Original works in the recipe.

I wanted to utilize both Jägermeister and Jägermeister Cold Brew for this cocktail because they both bring something unique to the table. The classic is more prominent up front with its herbs and spices that parallel a lot of the same that are present in Caribbean influenced cooking which Chef Lester used in his dish. I wanted that caramel flavor that stood out in his dish that they derived from Jagermeister to be able to bridge the gap between my cocktail to complement each other. The Jägermeister Cold Brew adds a subtle element of bittersweet while not being so pronounced it overpowers and as always plays very well with the Jägermeister Classic in a cocktail.

Tell us why you love your city.

Detroit is always an odd city to bring up to outsiders. “I’ve only ever been through the airport,” and “What’s it like there?” are some common phrases I always hear when it enters conversation. It’s really a hidden gem that’s off the radar to visit to most but always a curiosity for anyone that’s never been. Some of the best Middle Eastern food in the country, great dive bars with shockingly good burgers and high end restaurants that you might not have heard of yet. Art and music are two things that have always made this city stand out as well.

Born and raised in the Detroit area, I moved away in 2012 to live in Austin and shortly after started working in the bar industry. With experience in dives, hotel and cocktail bars I’m always looking for new perspectives and experiences to keep learning in my personal journey of growth in my career. In late 2020 I moved back to Detroit, a city I’ve always romanticized moving back to and bartending in.
