Sweet Potato Tater Tot Loaded Baked Nachos
Let's Dive In!

Tater Tots
2 bags store bought sweet potato tater tots
1 tsp chile powder
1 tsp nutmeg
¼ tsp allspice
½ tsp cumin
¼ tsp coriander
1 tsp salt
Zest of one lime
- Mix together all the ingredients
- Cook tater tots at 350 degrees for 15 minutes and immediately toss them with chile powder, nutmeg, allspice, cumin, coriander, salt, and lime zest
Layer tots in baking pan and top with alternating layers of:
- 2 tomatoes, diced small or ¾ cup of your favorite thick and chunky store-bought salsa
- 2 Poblano Peppers charred on the grill or stovetop burner, peeled, seeded, and thinly sliced
- 1 cup crumbled bacon (about ten slices)
- 2 cup cooked Jägermeister ground turkey
- 3 cups shredded Mexican cheese
- Broil under the broiler for 3 minutes or until cheese is melted and bubbling
- Top with Jägermeister + orange spiced sour chipotle cream
- 2 avocados, ripe & diced
- 1/2 cup scallions, chopped
- 1/4 cup cilantro, chopped
Jägermeister ground turkey
1 lb. ground turkey
½ tsp cumin
½ tsp coriander
½ tsp chile powder
½ tsp garlic powder
½ tsp salt
½ cup Jägermeister
1 tbsp butter
- Add oil to a sauté pan and cook turkey over medium heat
- When fully cooked, add spices, Jägermeister, and 1 tbsp butter
- Cook until liquid is absorbed by turkey
Jägermeister Sour Cream
8 ounces sour cream
2 tsp adobo from canned chipotle chiles
1 tsp cumin
2 tbsp orange juice
1 tbsp Jägermeister
Pinch of salt
Mix all ingredients in a small bowl—place in a squeeze bottle for easy access.

2 Parts Cold Brew Coffee
2 Parts Stout
¾ Part Jägermeister Cold Brew Coffee
¾ Part Teremana Reposado Tequila
¼ Part Ancho Reyes
¼ Part Simple
Float Shaken Cream
Top w/ Orange Oil & Freshly Grated Cinnamon

Build-in Glass Over Ice, Stir, Top, Serve
Using a Blender bottle with the included ball takes the work out of the freshly shaken whip, but you can also do this at home in a mason jar or some shaker tins. You can even toss in the spring of a Hawthorne strainer for the same effect!

Chef Santos' Sweet Potato Tater Tot Loaded Baked Nachos are the perfect gameday serve. I often ask myself before the games start, "Do I have a coffee? A beer? Or a cocktail?" This time we're going with all three with a Beer & Coffee Cocktail, The "Buenas Noches."
While the "Totchos" hit you with seasoned spicy goodness, this cocktail will cleanse your palate between bites with the cream on top and the bitterness of the stout coming through. The bold coffee and cacao flavors round it out, with a nice finish from the ancho chile liqueur.
