In the theme of live music, Nirvana’s “Nevermind” turns 30 years old on September 24th. One of Kurt Cobain's last meals was started with dessert as 1st course, Banana’s Dolce. Dave Grohl originally wanted to be a pilot. Inspired by the song “Lounge Act” and Dave & Kurt, I went with a Jet Pilot riff and incorporated some banana and coffee. The result is a fun riff on a tiki classic, paying tribute to music icons and the return to live music. Enjoy!

Mathias's Tips & Tricks

Tips & Tricks:

Traditionally, a jet pilot is blended. For this one, combine all ingredients into a blender with a scoop of crushed ice. Blend and serve. Even better if you can use a milkshake blender! Combine all ingredients with crushed ice and blend.

Make Banana Rum:

  • Combine about 4 oz Banana chips with 1 cup of overproof rum.
  • Steep 24-48 hours, strain, and serve.

“Don’s Mix”

  • You can also combine the cinnamon syrup with grapefruit juice to make “Don’s Mix” – a traditional tiki recipe ingredient.
  • This is equal parts combined and will then be 1 part don’s mix in the recipe
  • Don’s mix also prolongs the life of your grapefruit juice by adding sugar and can be used in many other tiki classics.
